In
Punjabi and Bengali cuisine the oil is typically heated
to a very high temperature, almost to smoking point, before
it is used in cooking. This reduces its sharpness. However
in certain areas in central India they often pour raw mustard
oil over the food (very similar to the way the Italians
use olive oil as a flavor enhancer over their food just
before serving). They enjoy its sharp bite.
Apart
from the culinary properties of the oil, it is even used
for hair and body massage.
